BARRELS
There has always been a cooperage at Velke Pavlovice. It is considered as a tradition in Moravia. Baron Aaron Günsberger makes their own barrels and new wine production is stored in new barrels. The cooperage was recently re-built and welcomes five wet coopers, who work there all year and fabricate around 200 barrels.
Oak wood is selected from the huge forests of Brdy and Boubin. The lumber is placed at Boubin and dried naturally for two years before being made into barrels.
Producing our own barrels enables us to control different aspects of the wine-making: firstly the geographical origins and the quality of the wood, the drying, the warming up when fabricating the barrels which has an effect on the wine in that way we can control the woody taste to be given to the wine.
